Marinated Garbanzos with Caraway Seeds

Ingredients
Boiled garbanzos
Extra Virgin Olive Oil (EVOO)
Caraway seeds
Sea salt
Preparation
As soon as the boiled garbanzos are drained and still very hot, layers into a jar and sprinkle with salted fennel seeds and sea salt to taste, then add another layer of beans, and so on until filled.

Preserved in fridge, garbanzos prepared this way last for a few weeks.
Excellent on whole wheat crackers or toast triangles as hors d'oeuvres, mixed in a salad, as a side dish for grilled meat or seafood, etc..
Glass containers are always recommended, as toxic chemicals from plastic containers tend to leach into conserved refrigerated food.
It is important to sterilize the long-term storage jars in boiling water and put them in a warm oven to dry.
Wine and Beverage Pairing
Excellent paired with Prosecco when served on whole wheat crackers or toast triangles as hors d'oeuvres. They are freat also with a good Chianti DOCG.
