Gluten Free Rice Flour Muffins

Gluten Free Rice Flour Muffins with Cranberries & Pecans – Buon Appetito!

  • 2 cups whole grain brown rice flour
  • 1 ½ tsp. baking powder
  • 1 ½ tsp.. baking soda
  • ½ tsp. sea salt
  • ½ cup maple syrup
  • ½ cup vanilla extract
  • ½ cup apple cider vinegar
  • ½ cup coconut oil
  • 3 ripe bananas
  • 1 whole organic lemon, seeds discarded
  • 1 whole small organic orange, seeds discarded
  • ¾ cup dried cranberries
  • ¾ cup pecans
  1. Preheat oven to 375° F (190° C).
  2. Spray muffin pan with baking oil and put in the freezer.
  3. In a large bowl mix flour, baking soda, baking powder, cranberries, pecans and salt.
  4. Mix maple syrup, vanilla extract, apple cider vinegar, coconut oil, bananas, whole lemon and orange, in a food processor until all ingredients are completely emulsified.
  5. Stir liquid mixture into dry ingredients to blend. Do not over mix.
  6. Take muffin pan from freezer and spray again lightly with baking oil.
  7. Pour batter into muffin pan, filling each two-third full.
  8. Bake for 22 to 25 minutes, or until a toothpick inserted into center of the muffin comes out dry.
