  • 1 cup whole wheat sourdough starter
  • 2 ½ cups whole wheat flour
  • 1 cup + 2 Tbs. water
  • 1 Tbs. extra virgin olive oil (EVOO)
  • ½ tsp. yeast
  • ½ tsp. sugar
  • ½ tsp. sea salt
  • ½ tsp. flaked chili peppers
  • 1 Tbs. mustard seeds
  • 2 Tbs. sunflower seeds
  • 2 Tbs. pumpkin seeds
  • 2 tsp. flax seeds
  • 2 tsp. anise seeds
  • ¼ cup sesame seeds
  • ½ cup millet
  • 12 jumbo green olives, roughly chopped
  1. In a large bowl mix whole wheat sourdough starter with 2 cups of whole wheat flour, 1 cup of room temperature water throughly, until a sticky ball of dough is obtained.
  2. Roll dough into generously greased with EVOO, cover with plastic wrap and let rest for 9 hours or overnight, until the dough has more than doubled in size.
  3. Dissolve sugar and yeast in 2 tablespoons of warm water (105°F – 115°F or 40.5°C – 46°C) until bubbly, about 5 minutes
  4. Add remaining flour, seeds, olives, bubbly yeast, olive oil, ea salt and mix well, until incorporated.
  5. Move dough onto floured surface and knead about 10 minutes.
  6. Roll dough into generously greased with EVOO, cover with plastic wrap and let rest for 2 to 4 hours, until almost doubled.
  7. Pre-heat oven to 425°F. (218°C.)
  8. Form the dough into your bread shape of choice, place them in selected baking device, dust with flour, cover with a damp kitchen towel and let rest for at least 30 minutes and up to 2 hours.
  9. Bake for 20 to 30 minutes, depending on the thickens and shape of your dough.
  10. Cool on rack.

  • Very pleasant texture, flavor and perfume.
  • To ensure a moister inside and sofert crust, put container of hot water in the oven to keep high level of humidity.
  • I typically slice the round individual sandwiches while they are steamy, just out of the oven, before letting then cool.
  • To moisten, rub fresh tomato pulpinto sliced surface and drizzle with EVOO.
  • Experiment with fewer, more, different seeds.
  • Any type of olives may be used instead of green olives. In fact, the traditional olive bread from the Italian region of Apulia is made with local black olives.
