Oatmeal Walnut & Chocolate Chips Cookies

Oatmeal Walnut & Chocolate Chips Cookies - Buon Appetito!

  • 1 cup butter, softened
  • 1 ½ cup browncane sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 ½ cups whole wheat flour
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • pinch sea salt
  • 3 cups rolled oats
  • ½ cup walnuts, roughly chopped
  • ½ cup semisweet chocolate chips
  1. Preheat oven to 375° F. (190° C.)
  2. In a large bowl combine flour, cinnamon, baking powder, baking soda and sea salt.
  3. In another bowl whisk softened butter and sugar with a fork until creamy.
  4. Add eggs, vanilla extract and beat to combine.
  5. Stir dry mixture into wet mixture until amalgamated.
  6. Add oats 1 cup at a time mixing to combine.
  7. Fold in chocolate chips and incorporate.
  8. Scoop 1 generous tablespoons batter and drop onto prepared baking sheet lined with oven paper, or use a bite-sized baking tray.
  9. Use all batter, leaving about 2 inches between cookies.
  10. Bake in the preheated oven for 9 minutes, until edges are lightly browned.
  11. Let cookies cool on the baking sheet about 30 minutes before removing.
