Spicy Peanut Sauce

Spicy Peanut Sauce

  • 1 can (13.5 oz.) full fat, unsweetened coconut milk
  • 1 Tbs. curry powder
  • 3/4 cup unsweetened peanut butter
  • ½ Tbs. sea salt
  • 3/4 cup sugar
  • 2 Tbs. apple cider vinegar
  • ½ cup water
  • 1 Tbs. chili sauce (optional or to taste)
  1. Assemble all ingredients in a heavy-bottomed pan and bring to low boil on medium heat, mixing constantly.
  2. Lower heat and simmer for 5 minutes mixing constantly to avoid sauce to stick to the bottom.
  3. Let cool to room temperature before serving.
  • Should you prefer, you may prepare peanut paste from scratch by grinding 12 oz. of roasted peanuts and use instead of commercial peanut butter.
  • Instead of curry powder you may use curry paste.
  • You may substitute the apple cider vinegar with white vinegar, however, do not use red or white wine vinegar, balsamic or rice vinegar.
  • Store in glass containers sterilized first in boiling water and then dried in a warm oven or microwave.
  • Refrigerate for up to three weeks.
  • Refrigerated sauce thickens substantially. To use, thin with little water and re-heat before serving.
  • The sauce might be frozen as well for as long as needed.
