Baked Avocado Omelette: Buon Appetito!

  • 4 large eggs
  • 2 avocados
  • 1 Tbs. mustard seeds
  • 1 Tbs. dried mint, crushed
  • Sea salt to taste
  1. Pre-heat oven to 400°F. (200°C.)
  2. Crush and mash avocado with a fork.
  3. Add mustard seeds, mint, sea salt and fold in.
  4. Add eggs, beat until uniformly mixed.
  5. Pour mixture in baking pan filed with non-stick foil.
  6. Bake for 15 minutes.
  7. Broil for 3 minutes, until top is firm.
  8. Let stand a couple of minutes before slicing and serving.
