Masala Mix for Indian Style Chai (Spicy Milk Tea)

Servings: about 50 (makes about 6 liters, or 6.5 quarts, of liquid to be served mixed with the same amount of milk, or milk substitute)

Masala Mix for Indian Style Chai (Spicy Milk Tea)

  • 1 cup star anise
  • 1 cup coriander
  • ½ cup cinnamon bark
  • ½ cup dried citrus peel
  • ½ cup cardamom pods
  • ¼ cup cloves
  • ¼ cup liquorice root
  • 1 Tbs. flaked chili pepper
  • 5 nutmegs
  1. Grind all spices in food processor and store in glass container in a dry place away from light.

  • Stored properly the spice mix lasts for a few months.
  • I usually prepare 1 liter (about 1 quart) of Masala Chai every 7 - 8 days and store it in a glass bottle in the refrigerator. Every morning I warm 1 cup of Masala Chai and 1 of vanilla flavored soy milk for a large serving of delicious Indian style chai.
  • You may use real milk, either whole, fat-reduced or fat-free, or your favorite type of milk substitute. I like the creaminess of the soy milk and, since Brigit loves it flavored with vanilla, that's what we always have in the house and that's what I use for my daily wake up drink.
