  • 1 pound (454 g.) whole wheat elbow macaroni
  • 8 Tbs. pesto
  • Extra virgin olive oil (EVOO) to taste
  • Coarse sea salt (to cook pasta) + sea salt to taste
  1. Bring to a boil 4 quarts of water, add salt.
  2. Add pasta, and bring back to a boil.
  3. Cook pasta al dente according to package instruction.
  4. Mix with pesto adding EVOO to taste and serve.
  • Instead of elbow macaroni you may use your favorite dried pasta. Please note that the chewy texture of the pesto lends itself well to whole wheat pasta.
  • Pairs well with white wines such as Arneis Langhe, Pinot Grigio, Ansonica, Soave Classico, Orvieto, Sauvignon Blanc. As for red, wines, i would suggest a quality Chianti, Pinot Noir, Rosso del Conero, or Merlot.
