Whole Wheat Spaghetti with Cilantro & Mix Nuts Pesto - Buon Appetito!

  • 10.5 oz. (300 g.) whole wheat spaghetti
  • 5 generous Tbs. pesto
  • Extra virgin olive oil (EVOO) to taste
  • Sea salt to taste
  1. Bring 3 quarts of water to a boil, add salt and pasta.
  2. Drain al dente according to package instruction, saving ½ cup water.
  3. Put pasta in serving bowl, add pesto and some of the preserved hot water, if needed to dilute pesto.
  4. Mix gently to coat pasta thoroughly and serve immediately.
  • Instead of spaghetti you may use your favorite dried pasta. Please note that the chewy texture of the pesto lends itself well to whole wheat pasta.
  • Pairs well with white wines such as Arneis from Piedmont, Italy and Pinot Grigio or Pinot Gris. As for red wines, I suggest a nice Chianti, a Rosso del Metauro, or Pinot Noir.
