Trecce dell'Orto Pasta Salad with Vegetables, Olives and Cheese Ready for Serving - Buon Appetito!

  • 8.8 oz. (250 gr.) Trecce dell'Orto (Garden Braids) pasta
  • 5 large pods fresh fava beans, shelled, beans cut in half
  • 1 green onion, thinly sliced
  • 1 stalk celery, chopped
  • 3 medium tomatoes, chopped
  • 6 mammoth green olives, chopped
  • 6 Kalamata olives, chopped
  • 3 ripe figs, cut into bite-sized chunks
  • 1 cup cubed Feta cheese
  • 3/4 cup beans (Canellini, Mayo Peruano, or your favorite variety of beans)
  • 2 Tbs. extra virgin olive oil flavored with rosemary
  • Basil, mint, rucola leaves to taste, broken into pieces by hand
  • Juice of ½ lemon
  • Sea salt and freshly ground pepper to taste
  1. Chop, mince, slice all ingredients as indicated above.
  2. In the meantime cook pasta al dente in salted water according to package instruction.
  3. Drain and transfer on serving bowl.
  4. Add all ingredients, mix gently and thoroughly.
  5. Serve warm or at room temperature.
